Best Japanese Chef's Knives (Gyuto) Compared: Global vs Tojiro vs MAC
Updated October 25, 2026 · Kitchen from Japan editors
Short answerThe Global G-2 is the easiest Japanese chef's knife to live with: all stainless, light at 170 g, and ground for either hand. Choose the Tojiro F-808 for a VG10 core, or the MAC MTH-80 for a thin blade with dimples.
01How we compared them
We read each maker's own page, including the Japanese-language pages for Global (Yoshikin) and Tojiro, which list details the English listings often leave out, such as the steel used for the core and cladding.
02At a glance
Fig. 1Weight
Global lists grams (converted); MAC lists ounces. Tojiro does not list a weight for the F-808.
Yoshikin's page for the G-2 says to avoid the dishwasher because it can cause rust, and to avoid frozen food, bones and shells. That advice applies to any hard Japanese blade. See our care guide.
How we researched this We compiled the specs from official maker pages and Japanese-language manuals and spec sheets (checked 2026-10-25). We have not bought or tested every product ourselves. Makers update their listings, so please confirm on the official page before you buy.
